Easiest Holiday Candy EVER!

Warning… If you’re trying to cleanse or something before you indulge over the holidays, don’t get caught in the trap of “Oh, I’ll just make this candy for my friends/neighbors.” It’s super, super hard not to eat. There was one occasion last year when I had promised someone to make this candy for a party and was doing a cleanse and I didn’t eat any. But it was a super human effort. And I had to get it out of my house as soon as I made it.

Anyway, have y’all seen that Old Navy commercial? The one where Julia Louis Dreyfus makes a turpigen and harvests her own cranberries from Quebec? She says, “It’s two months of work and I cry now more than I laugh…” It’s pretty hilarious. That level of prep does not happen at the Harvey house. God puts people together for a reason, and He no doubt put me with Will because he can cook and I can’t. Seriously. I’d live on smoothies and Amy’s organic frozen meals if it weren’t for him.

But, when it’s the holidays, I have to have something to take to parties, church events, fundraisers etc. And Will can spatchcock the heck out of a chicken but he couldn’t care less about sweets.

All I can say is thank goodness for The Salisbury Academy cookbook and whoever put the “Rocky Road Candy” recipe in there. Because it’s my go-to. And it seriously takes five minutes to make. You can thank me for saving you all this time, but don’t blame me if you eat the entire batch… I warned you. Oh. And don’t “keep the ingredients on hand in case you have to make it at the last minute.” The last minute will suddenly become 3 am when you can’t sleep or a random Tuesday when you’re bored. I won’t say how I know this.

 

Rocky Road Candy:

1 bag chocolate chips

1 bag butterscotch chips

1 cup peanut butter

1 cup peanuts

1 bag mini marshmallows

Combine first three ingredients. Heat in microwave for 1 – 1.5 minutes. Stir. Heat another 1-1.5 minutes. Add in remaining two ingredients.  Pour in foil lined 11×13 baking pan. (I even cheat and use the disposable ones sometimes!) Store in fridge.

HINT: If you want your marshmallows to stay intact so it looks pretty when you cut, let the chocolate mixture cool for a few minutes. But it’s still just as yummy even if they melt!

That’s it. Seriously. 5 minutes.

My husband told me that a couple of people I had given this recipe to said their’s didn’t “turn out as well as mine.” ???? It’s a microwave recipe. Little Will can make it with basically no supervision.
